  • 2 tsp ground cinnamon
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1 cup powdered sugar
  • 3 tbsp whole milk

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, cinnamon, and salt.
  3. In a large bowl, cream together softened butter and granulated sugar until fluffy. Add pumpkin puree and eggs; mix until smooth. Gradually fold in dry ingredients until just combined.
  4. For the streusel topping, mix brown sugar and flour with melted butter until crumbly.
  5. Pour half the batter into the prepared pan, sprinkle half of the streusel on top, add the remaining batter, then top with the rest of the streusel mixture. Bake for 30-35 minutes or until a toothpick comes out clean.
  6. While cooling, whisk powdered sugar and milk to create icing; drizzle over the cake once cooled slightly.
