  • 8 oz cream cheese (softened)

  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 egg (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine softened cream cheese, sugar, vanilla extract, and fresh raspberries until well mixed but still chunky.
  3. Roll out the thawed puff pastry on a floured surface to about 1/8 inch thick. Cut into 3-inch squares.
  4. Place a spoonful of the raspberry cream cheese mixture in the center of each square. Fold diagonally to form triangles and seal edges with a fork.
  5. Whisk an egg with a tablespoon of water and brush over each pastry triangle.
  6. Bake for 15-20 minutes or until golden brown.
