- 1/2 cup unsalted butter, softened
- 1 cup all-purpose flour
- 3 large eggs
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a mixing bowl, cream together the softened butter and 1/4 cup of sugar until light and fluffy. Add flour and mix until crumbly. Press into the bottom of the prepared dish and bake for 15 minutes until golden.
- In another bowl, whisk together eggs, remaining sugar, flour, and lemon juice until smooth. Gently fold in the raspberries.
- Pour the filling over the pre-baked crust and bake for an additional 20-25 minutes until set but slightly jiggly in the center.
- Allow to cool completely before dusting with powdered sugar and cutting into squares.
