  • 8 oz penne pasta
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup full-fat coconut milk
  • 2 tsp jerk seasoning
  • 1 cup bell peppers (mixed colors), sliced
  • 2 green onions, chopped (for garnish)
  • 1/2 cup grated Parmesan cheese
  • Salt to taste

Instructions

  1. Cook the pasta in boiling salted water until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant.
  3. Add sliced bell peppers and cook until slightly soft.
  4. Stir in coconut milk and jerk seasoning; mix well.
  5. Fold in cooked pasta until coated. If needed, add reserved pasta water for desired consistency.
  6. Remove from heat and stir in Parmesan cheese. Garnish with green onions before serving.
