  • 2 (6 oz) salmon fillets
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • 1/4 cup fresh parsley, chopped
  • 1 tbsp capers, chopped
  • 2 garlic cloves, minced
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Pat the salmon fillets dry and place them on the baking sheet. Drizzle with 1 tbsp olive oil, season with salt and pepper.
  3. Roast in the oven for 12-15 minutes until it flakes easily with a fork.
  4. While the salmon cooks, combine parsley, capers, garlic, lemon juice, and remaining olive oil in a bowl to make salsa verde.
  5. Adjust seasoning and add red pepper flakes if desired.
  6. Serve the roasted salmon topped with salsa verde.
