  • 2 tbsp extra virgin olive oil

  • 1 cup cherry tomatoes, halved

  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta in a large pot of salted boiling water for 8-10 minutes until al dente. Drain, reserving some cooking water.
  2. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 30 seconds). Add halved cherry tomatoes and cook until they start to soften.
  3. Season with salt, pepper, and chopped basil; stir well.
  4. Toss in the drained rotini pasta with the tomato mixture. Mix gently over low heat, adding reserved pasta water as needed for creaminess.
