- 1 sheet puff pastry (thawed)

- 1 egg (beaten for egg wash)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper.
- In a skillet, heat a splash of olive oil over medium heat. Sauté the spinach until wilted, about 2 minutes. Stir in chopped dill and season lightly with salt.
- In a bowl, mix softened cream cheese, lemon juice, sautéed spinach-dill mixture, salt, and pepper until smooth.
- Roll out the puff pastry on a floured surface into two rectangles large enough to encase the salmon fillets. Place one fillet on each rectangle and spread cream cheese filling generously on top.
- Fold the pastry over the salmon, sealing edges by pressing gently. Brush tops with beaten egg for a golden finish.
