  • 2 skinless salmon fillets (6 oz each)
  • 1 sheet puff pastry (thawed)
  • 2 cups fresh baby spinach
  • 2 tbsp fresh dill (chopped)
  • 4 oz cream cheese (softened)
  • 1 tbsp lemon juice
  • Salt and pepper (to taste)
  • 1 egg (beaten for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper.
  2. In a skillet, heat a splash of olive oil over medium heat. Sauté the spinach until wilted, about 2 minutes. Stir in chopped dill and season lightly with salt.
  3. In a bowl, mix softened cream cheese, lemon juice, sautéed spinach-dill mixture, salt, and pepper until smooth.
  4. Roll out the puff pastry on a floured surface into two rectangles large enough to encase the salmon fillets. Place one fillet on each rectangle and spread cream cheese filling generously on top.
  5. Fold the pastry over the salmon, sealing edges by pressing gently. Brush tops with beaten egg for a golden finish.
  6. Bake for 20-25 minutes until golden brown and flaky.
