  • 1 sheet puff pastry (thawed)
  • 1 lb skinless salmon fillet
  • 2 cups fresh spinach
  • 4 oz cream cheese (full-fat)
  • 2 tbsp fresh dill or parsley (chopped)
  • Zest of 1 lemon
  • 1 egg (beaten for egg wash)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Sauté spinach in olive oil over medium heat until wilted, about 2-3 minutes.
  3. In a bowl, mix sautéed spinach, cream cheese, herbs, lemon zest, salt, and pepper until creamy.
  4. Roll out the puff pastry on a floured surface to 1/8 inch thick, then cut into squares.
  5. Place filling and a piece of salmon on each square; fold over and seal edges with a fork.
  6. Brush each Wellington with beaten egg.
  7. Bake for 20-25 minutes until golden brown.
