  • 4 ripe tomatoes, chopped
  • 2 tbsp harissa paste
  • 100g feta cheese, crumbled
  • 1/4 cup fresh cilantro or parsley, chopped
  • 4 large eggs
  • 2 tbsp extra virgin olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté the chopped onion until translucent, then add minced garlic and cook until fragrant.
  2. Add chopped tomatoes, harissa paste, cumin, smoked paprika, salt, and pepper. Simmer until the mixture thickens into a sauce.
  3. Create small wells in the sauce using a spoon and crack an egg into each well. Cover the skillet and cook for about 5–7 minutes or until whites are set but yolks remain runny.
  4. Sprinkle crumbled feta and fresh herbs on top before serving hot with crusty bread.
