  • 1 cup stone-ground grits
  • 4 cups low-sodium chicken broth
  • ½ cup heavy cream
  • 4 tbsp unsalted butter (divided)
  • 2 cloves garlic (minced)
  • 2 tsp Cajun seasoning
  • Salt and pepper to taste
  • Green onions (for garnish)

Instructions

  1. Prepare the Grits: In a medium saucepan, bring 4 cups of chicken broth to a boil. Gradually whisk in 1 cup of stone-ground grits and reduce heat to low.
  2. Cook Until Creamy: Stir frequently until thickened (about 20-25 minutes). If too thick, add more broth or water.
  3. Add Butter and Cream: Stir in ½ cup of heavy cream and 4 tbsp of butter until melted. Season with salt and pepper.
  4. Sauté the Shrimp: In a skillet over medium-high heat, melt 2 tbsp of butter. Add minced garlic and cook until fragrant. Toss in the shrimp seasoned with Cajun seasoning, cooking until pink (about 3-4 minutes).
  5. Combine & Serve: Spoon grits into bowls, top with sautéed shrimp, and garnish with chopped green onions.
