Ingredients
- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup fresh cilantro, finely chopped
- 1/2 cup freshly squeezed lime juice (about 4 limes)
- 4 garlic cloves, minced
- 2 tbsp olive oil
- 1 tsp ground cumin
- Salt and pepper to taste
- 1 cup low-sodium chicken broth
- 1 tbsp honey or brown sugar
Instructions
- Prepare your ingredients by finely chopping garlic and cilantro.
- In a skillet, heat olive oil over medium-high heat and sear chicken breasts until golden brown on both sides.
- In a bowl, whisk together lime juice, garlic, cilantro, honey or brown sugar, cumin, salt, and pepper.
- Place the seared chicken in the slow cooker and pour the marinade over it.
- Add chicken broth to keep the chicken moist.
- Cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
- Shred the chicken in the slow cooker using two forks and mix with juices before serving.
