Ingredients

Scale
  • 4 large flour tortillas
  • 2 lbs beef chuck roast
  • 4 dried ancho chiles
  • 2 dried guajillo chiles
  • 1 medium onion, chopped
  • 4 garlic cloves
  • 1 tsp cumin powder
  • 2 cups beef broth
  • 1 cup shredded cheddar cheese
  • Sour cream (optional)

Instructions

  1. Prepare the chiles: Remove stems and seeds from dried chiles. Toast in a dry skillet over medium heat for 3-5 minutes until fragrant.
  2. Create the sauce: Soak toasted chiles in hot water for 30 minutes. Blend with onion, garlic, cumin, and beef broth until smooth.
  3. Cook the beef: Sear the chuck roast in a large pot over medium heat until browned on all sides; season with salt and pepper.
  4. Add sauce to beef: Pour blended sauce over the meat, cover, and simmer on low heat for 2-3 hours until fork-tender.
  5. Shred the meat: Remove beef and shred it with two forks. Return to pot and stir with the sauce.
  6. Assemble burritos: On each tortilla, add shredded beef mixture and cheese; roll tightly and place seam-side down in an oven-safe dish.
  7. Bake burritos: Preheat oven to 350°F (175°C) and bake for about 15 minutes until warmed through.
