  • 8 oz shrimp (peeled and deveined)
  • 8 oz thin rice noodles
  • 1 cup bell peppers (sliced; mix of red, yellow, green)
  • 2 cloves garlic (minced)
  • 1 tbsp fresh ginger (grated)
  • 3 tbsp chili sauce
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp fresh lime juice
  • 1 cup low-sodium chicken broth
  • 1 tsp brown sugar
  • 1 tsp sesame oil
  • Fresh cilantro (for garnish)

Instructions

  1. Soak rice noodles in hot water for 8-10 minutes until tender. Drain and set aside.
  2. Heat sesame oil in a large skillet over medium heat. Sauté minced garlic and grated ginger for about one minute until fragrant.
  3. Add sliced bell peppers and stir-fry for 3-4 minutes until slightly softened but still crisp.
  4. Push veggies to one side, add shrimp, and cook for about 2-3 minutes per side until pink and opaque.
  5. In a small bowl, combine brown sugar, soy sauce, chili sauce, lime juice, and chicken broth. Pour over shrimp and veggies.
  6. Add soaked rice noodles to the skillet and toss everything together gently for about 2 minutes until well combined.
  7. Serve immediately garnished with fresh cilantro.
