Description

  • 10 ounces fresh spinach
  • 15 ounces ricotta cheese
  • 12 cannelloni pasta tubes (no-boil)
  • 24 ounces marinara sauce
  • 1 cup grated Parmesan cheese
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Rinse spinach and wilt in a pot over medium heat for about 2 minutes. Cool, chop finely.
  3. In a bowl, combine chopped spinach, ricotta, minced garlic, oregano, and half of the Parmesan cheese.
  4. Stuff each cannelloni tube with the spinach-ricotta mixture using a spoon or piping bag.
  5. Spread half of the marinara sauce in a baking dish. Arrange stuffed cannelloni side by side, cover with remaining marinara sauce and Parmesan.
  6. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 10 minutes until golden brown.
