  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream (full-fat)
  • 2 tsp pure vanilla extract
  • 1 ½ cups fresh strawberries, pureed (with some chopped for swirls)

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix graham cracker crumbs with melted butter and press firmly into the bottom of a springform pan. Bake the crust for 8-10 minutes until lightly golden.
  2. In a large mixing bowl, beat softened cream cheese and sugar until smooth. Add sour cream and vanilla extract; mix until combined.
  3. Puree fresh strawberries in a blender (reserve some for swirling). Pour half of the cheesecake filling over the cooled crust; add dollops of strawberry puree, followed by the remaining filling.
  4. Use a knife to swirl the puree gently into the filling without fully blending. Bake for about 50-60 minutes until set around edges but slightly wobbly in center. Let cool gradually in the oven with door ajar.
