- 3 cups cooked, shredded boneless skinless chicken
- 2 cups fresh or frozen corn
- 8 oz cream cheese
- 1 cup shredded sharp cheddar cheese (divided)
- 4 green onions (sliced)
- 2 tsp taco seasoning
- 1/2 cup milk
- 1 tsp chili powder
- 2 tbsp lime juice
- 1 cup panko breadcrumbs
Instructions
- Preheat oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
- In a skillet over medium heat, cook chicken until golden brown, about 6–7 minutes per side. Let rest before shredding.
- In a large bowl, combine shredded chicken, corn, cream cheese, milk, taco seasoning, chili powder, lime juice, and half of the cheddar cheese. Mix until well combined.
- Pour mixture into the prepared baking dish. Top with remaining cheddar cheese and sprinkle panko breadcrumbs on top.
- Bake for 25–30 minutes or until bubbly and golden brown. Let cool for 5 minutes before garnishing with sliced green onions.
