- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cloves fresh garlic, minced
- 1 red bell pepper, thinly sliced
- 1 cucumber, thinly sliced
- 4 whole wheat tortillas
- 1/2 cup creamy peanut butter
- 3 tbsp low-sodium soy sauce
- 2 tbsp fresh lime juice
- 1 tbsp honey or maple syrup
- 1 tsp sesame oil
Instructions
- Prep all ingredients by washing and slicing vegetables.
- In a skillet over medium heat, cook chicken breasts in a drizzle of oil for about 6-8 minutes per side until golden brown. Allow to rest before slicing.
- Whisk together peanut butter, soy sauce, lime juice, honey, and sesame oil until smooth.
- On each tortilla, spread peanut sauce down the center. Layer with sliced chicken, bell pepper, cucumber, and additional veggies.
- Fold sides of tortilla and roll tightly from bottom to top. Secure with toothpicks if needed.
- Serve immediately with extra peanut sauce for dipping.
