- 1 medium onion, chopped

- 1 cup full-fat coconut milk
- 1 cup low-sodium vegetable broth
- Salt & pepper to taste
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Press the tofu between paper towels for at least 30 minutes to remove excess moisture.
- Heat oil in a large skillet over medium heat. Sauté the chopped onion until translucent, about 4-5 minutes.
- Add minced garlic and smoked paprika; stir for another minute until fragrant.
- Pour in coconut milk and vegetable broth; simmer for 10 minutes.
- Carefully add cubed tofu; simmer for an additional 5-7 minutes.
- Season with salt and pepper as desired. Garnish with fresh parsley before serving over rice or noodles.
