- 1.5 lbs jumbo raw shrimp, peeled and deveined
- 2 tbsp olive oil
- 2 tbsp unsalted butter, divided
- 5 cloves garlic, minced
- 1/2 cup sun-dried tomatoes in oil, drained & sliced
- 1 cup heavy whipping cream
- 1/3 cup low-sodium chicken broth
- 3 cups fresh baby spinach leaves
- 1/2 cup freshly grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/4 cup fresh basil leaves, torn
- Salt and freshly ground black pepper to taste
Instructions
- Sear shrimp: Cook shrimp in olive oil and butter for 2 min per side until pink. Transfer to plate.

- Aromatics: Sauté garlic and sun-dried tomatoes in butter for 1 min until fragrant.

- Cream & spinach: Add cream and broth; simmer 3 min. Stir in spinach until wilted.

- Combine: Stir in Parmesan, return shrimp to skillet, simmer 1 min. Garnish with fresh basil.
