  • 1 box (15.25 oz) red velvet cake mix
  • 3 large eggs (room temperature)
  • 1/2 cup vegetable oil
  • 1 cup water
  • 16 oz full-fat cream cheese (softened)
  • 1/2 cup granulated sugar
  • 1/2 cup sour cream
  • 2 tbsp unsweetened cocoa powder
  • 1 tsp pure vanilla extract
  • 1/2 cup semi-sweet chocolate chips (optional)
  • Whipped cream (for garnish)

Instructions

  1. Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. In a large bowl, mix red velvet cake mix with eggs, vegetable oil, and water until smooth.
  3. In another bowl, beat cream cheese until creamy; add sugar, sour cream, cocoa powder, and vanilla until blended.
  4. Pour half the red velvet batter into the pan. Spoon dollops of cream cheese mixture on top, then add remaining red velvet batter. Swirl gently with a knife.
  5. Bake for about 60 minutes until slightly jiggly in the center. Cool in the oven with the door cracked for 30 minutes before transferring to a wire rack to cool completely.
  6. Refrigerate for at least four hours before serving. Top with whipped cream and chocolate chips if desired.
