  • 6 oz firm tofu (optional, cubed)
  • 2 cups mixed vegetables (e.g., bell peppers, bok choy, carrots)

Instructions

  1. Heat the vegetable broth in a large pot over medium heat. Add grated ginger and soy sauce; bring to a gentle simmer.
  2. Cook ramen noodles according to package instructions until al dente.
  3. Add mixed vegetables to the simmering broth and cook for about five minutes until tender but still vibrant.
  4. If using tofu, heat sesame oil in a pan over medium heat and fry cubed tofu until golden brown on all sides.
