  • 3 cups low-sodium vegetable broth
  • 1 cup dried cherries

  • Salt and pepper to taste

Instructions

  1. Rinse wild rice under cold water until clear. Combine with vegetable broth in a saucepan over medium heat.
  2. Bring to a boil, then reduce heat to low. Cover and simmer for 45-50 minutes until tender yet chewy.
  3. In a large skillet, heat olive oil over medium heat. Sauté onion and garlic until translucent (about 5 minutes).
  4. Stir in dried cherries and toasted pecans; cook for another 3-4 minutes.
  5. Add the cooked wild rice to the skillet mixture; gently fold everything together with salt and pepper.
