Ingredients
Scale
For the crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
For the filling:
- 1 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1/2 teaspoon baking powder
- 4 large eggs
- 1/2 cup fresh lemon juice (about 3–4 lemons)
- Zest of 1 lemon
- Powdered sugar (for dusting)
Instructions
- Prepare the crust: Preheat the oven to 350°F (175°C). In a medium bowl, combine the flour, powdered sugar, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Press the mixture into the bottom of an ungreased 9×9-inch baking dish to form an even layer. Bake for 15-20 minutes, until lightly golden brown.
- Make the filling: While the crust is baking, whisk together the granulated sugar, flour, and baking powder in a separate bowl. Add the eggs, lemon juice, and lemon zest, whisking until smooth and fully combined.
- Assemble and bake: Once the crust is done, pour the lemon filling over the hot crust. Return the dish to the oven and bake for 20-25 minutes, or until the filling is set and lightly golden around the edges.
- Cool and serve: Allow the lemon bars to cool completely in the baking dish before dusting with powdered sugar. Slice into squares and serve.
Notes
- For a stronger lemon flavor, increase the lemon zest or add a bit more lemon juice to the filling.
- Make sure the bars are completely cool before cutting to ensure clean slices.
- You can refrigerate the bars to set them more firmly, especially for a firmer texture.
- If you prefer a more decadent version, add a layer of whipped cream or a dollop of fresh cream on top before serving.
