  • 1/2 teaspoon baking powder
  • 4 large eggs
  • 1/2 cup fresh lemon juice (about 34 lemons)
  • Zest of 1 lemon
  • Powdered sugar (for dusting)

Instructions

  • Prepare the crust: Preheat the oven to 350°F (175°C). In a medium bowl, combine the flour, powdered sugar, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Press the mixture into the bottom of an ungreased 9×9-inch baking dish to form an even layer. Bake for 15-20 minutes, until lightly golden brown.
  • Make the filling: While the crust is baking, whisk together the granulated sugar, flour, and baking powder in a separate bowl. Add the eggs, lemon juice, and lemon zest, whisking until smooth and fully combined.
  • Assemble and bake: Once the crust is done, pour the lemon filling over the hot crust. Return the dish to the oven and bake for 20-25 minutes, or until the filling is set and lightly golden around the edges.
  • Cool and serve: Allow the lemon bars to cool completely in the baking dish before dusting with powdered sugar. Slice into squares and serve.
