- 1.5 lbs boneless skinless chicken breasts or thighs, cut into strips
- 1/2 cup creamy peanut butter
- 1/2 cup canned coconut milk
- 2 tbsp low-sodium soy sauce (or tamari)
- 2 tbsp fresh lime juice
- 1 tbsp brown sugar or honey
- 1 tbsp yellow curry powder
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1/4 tsp red pepper flakes
- 1/4 cup roasted peanuts, chopped
- Fresh cilantro & lime wedges for garnish
- Wooden bamboo skewers
Instructions
- Make sauce & marinade: Whisk peanut butter, coconut milk, soy sauce, lime juice, brown sugar, curry powder, garlic, ginger, and pepper flakes.

- Thread skewers: Toss chicken in half of sauce; thread onto soaked bamboo skewers.

- Grill: Grill skewers on high heat for 4-5 min per side until nicely charred and cooked through.

- Serve: Drizzle with remaining warm peanut sauce, top with crushed peanuts, cilantro, and lime.
