  • 1 English cucumber, diced

  • 1/3 cup Kalamata olives, pitted
  • 8 oz flank or sirloin steak
  • 3 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Wash and prepare all vegetables by dicing the tomatoes and cucumbers, and thinly slicing the red onion.
  2. In a bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper. Marinate the steak in this mixture for at least 30 minutes.
  3. Preheat your grill to medium-high heat. Grill the marinated steak for about 4-5 minutes per side until it reaches medium-rare doneness.
  4. In a large bowl, combine diced tomatoes, cucumbers, bell peppers, red onion slices, olives, and crumbled feta cheese. Drizzle with additional olive oil and lemon juice before tossing gently.
  5. Allow the steak to rest for five minutes before slicing against the grain into strips. Top the salad with the sliced steak.
