Ingredients

Scale
  • 34 lbs pork shoulder
  • 3 large yellow onions, thickly sliced
  • 10 cloves fresh garlic
  • 2 cups low-sodium chicken broth
  • 2 tsp fresh thyme (or 1 tsp dried)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Pat the pork shoulder dry and season generously with salt and pepper.
  2. Heat olive oil in a large Dutch oven over medium-high heat. Sear the pork until browned on all sides, about 4-5 minutes per side.
  3. Remove the pork and add sliced onions and garlic to the pot; sauté until translucent.
  4. Pour in chicken broth, scraping up any browned bits from the pot.
  5. Return the pork to the pot, cover tightly, and braise on low heat for 3-4 hours until tender.
  6. Shred or slice the pork and serve with onion-garlic sauce drizzled on top.
