  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 bell peppers (red and yellow), chopped
  • 1 (14.5 oz) can diced tomatoes (packed in juice)
  • 2 cups beef broth (low-sodium)
  • 2 cups elbow macaroni
  • 2 tsp smoked paprika
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Set your Instant Pot to 'Sauté' mode. Heat olive oil, then add chopped onion and bell peppers. Sauté until softened.
  2. Stir in minced garlic and ground beef, cooking until browned and no pink remains (about 5-7 minutes).
  3. Add diced tomatoes and beef broth, scraping any browned bits from the bottom.
  4. Mix in elbow macaroni, smoked paprika, Italian seasoning, salt, and pepper. Stir well before sealing the lid.
  5. Cook on high pressure for 8 minutes with a natural pressure release for about 5 minutes before quick releasing the remaining pressure.
  6. Carefully open the lid once steam is released. Stir and serve warm, garnished with fresh parsley if desired.
