- 2 – 2.5 lbs boneless beef chuck roast, cut into 1-inch cubes
- 12 oz cremini mushrooms, sliced
- 1 large yellow onion, diced
- 4 cloves garlic, minced
- 2 cups low-sodium beef broth
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Dijon mustard
- 3/4 cup sour cream
- 2 tablespoons cornstarch (mixed with 2 tbsp cold water)
- 12 oz wide egg noodles (or spiral rotini)
- 1 tablespoon olive oil
- 1 teaspoon fresh thyme leaves
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
Instructions
- Sear Beef (Optional): Heat olive oil in a skillet over high heat. Season beef cubes with salt and pepper; sear for 2 to 3 mins until browned. Transfer to slow cooker.

- Load Slow Cooker: Add sliced mushrooms, diced onion, minced garlic, beef broth, Worcestershire, and thyme. Stir gently.

- Slow Cook: Cover and cook on LOW for 7 to 8 hours (or HIGH for 4 to 5 hours) until beef is fork tender.
- Thicken & Add Sour Cream: Stir in cornstarch slurry and cook on HIGH for 15 mins until bubbling and thickened. Turn off heat; stir in sour cream and Dijon mustard until silky smooth.

- Serve Over Noodles: Spoon generous beef stroganoff over buttered egg noodles or pasta. Garnish with fresh thyme and cracked black pepper!
