Description

  • 4 boneless, skinless chicken breasts or thighs
  • 1 cup long-grain white rice (uncooked)
  • 2 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup frozen mixed vegetables (optional, e.g., peas, carrots, or green beans)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar cheese (optional, for topping)
  • Fresh parsley, chopped (for garnish)

Instructions

  • Prepare the Slow Cooker:
    • Lightly grease the slow cooker with non-stick spray or line it with a slow cooker liner for easy cleanup.
  • Layer the Ingredients:
    • Place the chicken breasts or thighs in the bottom of the slow cooker. Sprinkle them with onion powder, garlic powder, paprika, thyme, salt, and pepper.
    • Add the diced onion, minced garlic, and frozen mixed vegetables (if using) on top of the chicken.
  • Add the Rice and Liquid:
    • Pour the uncooked rice evenly over the chicken and vegetables.
    • In a medium bowl, whisk together the chicken broth and cream of chicken soup until smooth. Pour the mixture over the rice and chicken, ensuring everything is covered.
  • Cook the Dish:
    • Cover and cook on low for 5–6 hours or high for 3–4 hours. Avoid lifting the lid during cooking to retain moisture and ensure the rice cooks properly.
  • Check for Doneness:
    • After the cooking time, check the chicken for doneness (internal temperature should be 165°F/74°C). Stir the rice to ensure it’s evenly cooked. If the rice seems undercooked, add a splash of chicken broth, cover, and cook for an additional 15–20 minutes.
  • Add Cheese (Optional):
    • If using shredded cheddar cheese, sprinkle it over the top of the dish. Cover and let it melt for 5 minutes before serving.
  • Serve and Garnish:
    • Serve the chicken and rice hot, garnished with fresh parsley for a burst of flavor and color.

Notes

  • For added flavor, you can sear the chicken in a skillet with a little oil before adding it to the slow cooker.
  • Use brown rice instead of white rice for a healthier option, but note that it may require more cooking time and additional liquid.
  • If you prefer a creamier dish, stir in a splash of heavy cream or a dollop of sour cream before serving.
