Ingredients
Scale
- 4 large Russet potatoes
- 3 boneless, skinless chicken breasts (about 1 pound)
- 1/2 cup buffalo sauce
- 4 oz cream cheese (softened)
- 1 cup shredded cheddar cheese
- 2 green onions (sliced thin)
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Wash and prick the potatoes with a fork; bake directly on the rack for 45 minutes until tender.
- In a skillet over medium heat, cook seasoned chicken breasts for about 6-7 minutes per side until cooked through. Let rest before shredding.
- In a mixing bowl, combine shredded chicken, softened cream cheese, and buffalo sauce; mix well.
- Once potatoes are baked, cut them lengthwise without cutting all the way through. Scoop out some potato flesh to create room for stuffing.
- Fold cheddar cheese into the chicken mixture and generously fill each potato. Top with additional shredded cheese.
- Return stuffed potatoes to the oven for another 10-15 minutes until cheese is bubbly and golden. Garnish with sliced green onions before serving.
