Instructions
- Preheat oven to 400°F (200°C). Scrub potatoes clean, poke holes with a fork, and bake on a baking sheet for 45-60 minutes until tender.
- Let the baked potatoes cool slightly, then cut in half lengthwise and scoop out the insides into a mixing bowl.
- Add butter, sour cream, salt, pepper, and half of the shredded cheese to the potato flesh. Mash until smooth with some lumps for texture.
- Stir in chopped green onions and bacon bits for added flavor.
- Transfer the mixture into a greased baking dish. Spread evenly, top with remaining cheese and additional bacon bits if desired.
