  • 1 cup sour cream (full-fat)
  • 2 cups shredded sharp cheddar cheese
  • 4 green onions, chopped
  • 1 cup cooked bacon bits (thick-cut)
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Scrub potatoes clean, poke holes with a fork, and bake on a baking sheet for 45-60 minutes until tender.
  2. Let the baked potatoes cool slightly, then cut in half lengthwise and scoop out the insides into a mixing bowl.
  3. Add butter, sour cream, salt, pepper, and half of the shredded cheese to the potato flesh. Mash until smooth with some lumps for texture.
  4. Stir in chopped green onions and bacon bits for added flavor.
  5. Transfer the mixture into a greased baking dish. Spread evenly, top with remaining cheese and additional bacon bits if desired.
  6. Bake for 20-25 minutes until bubbly and golden brown.
