- 6 large eggs
- 1/4 cup mayonnaise
- 1 tsp yellow mustard
- 1/4 cup red bell pepper, finely chopped
- 1/4 cup blue corn tortilla chips, crushed

Instructions
- Boil the eggs in a pot of cold water until boiling. Cover and remove from heat; let sit for 12 minutes.
- Transfer eggs to an ice bath to cool before peeling.
- Once cool, crack shells and peel under running water if needed.
- Slice each egg in half lengthwise, scoop out yolks into a bowl, and place whites on a serving platter.
- Mash yolks with mayonnaise, mustard, salt, and pepper until smooth. Mix in chopped red bell pepper.
- Scoop or pipe the yolk mixture into each egg white half.
- Top with crushed blue corn tortilla chips before serving.
