Ingredients

  • 1 lb fresh shrimp, peeled and deveined
  • 1 lb calamari, cleaned and cut into rings
  • 1 cup bell peppers, diced (mixed colors)
  • 1 cup cucumber, diced
  • ½ cup fresh parsley or cilantro, chopped
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Clean shrimp and calamari under cold water.
  2. Boil salted water; add shrimp and calamari. Cook until shrimp are pink (3-4 minutes). Drain and cool.
  3. While cooling, chop bell peppers and cucumbers into bite-sized pieces. Finely chop herbs.
  4. In a bowl, whisk olive oil, lemon juice, Dijon mustard, salt, and pepper until combined.
  5. In a large bowl, mix cooled seafood with veggies and herbs; drizzle dressing over top and toss gently.
  6. Chill in the fridge for at least 30 minutes before serving to enhance flavors.
