  • ¼ cup freshly squeezed lime juice
  • 1 cup coconut milk (full-fat)
  • 1 cup jasmine rice
  • 3 garlic cloves (minced)
  • 1 tbsp brown sugar
  • Salt and pepper to taste
  • Cilantro (optional, for garnish)

Instructions

  1. Prepare the marinade by whisking together ginger, lime juice, garlic, brown sugar, salt, and pepper in a bowl.
  2. Marinate the pork tenderloin in the mixture for at least 30 minutes in the fridge.
  3. Rinse jasmine rice under cold water until clear. In a saucepan, combine rice with coconut milk and water; bring to a boil and then simmer covered for about 15 minutes until fluffy.
  4. Sear the marinated pork in a heated skillet with oil for 4-5 minutes on each side until golden brown.
  5. Transfer seared pork to a preheated oven at 400°F (200°C) and roast for 15-20 minutes or grill until it reaches an internal temperature of 145°F (63°C).
  6. Let pork rest for 5 minutes before slicing. Serve over coconut rice with lime wedges.
