- 2 tablespoons olive oil
- 3 cloves fresh garlic, minced
- 2 medium carrots, chopped
- 2 stalks celery, diced
- 1 medium onion, chopped
- 6 cups low-sodium chicken broth
- 1 cup heavy cream
- 16 ounces store-bought gnocchi
- 2 cups fresh spinach or kale
- 1 teaspoon dried thyme
- 2 bay leaves

Instructions
- Heat olive oil in a large pot over medium heat. Sauté chopped onions until translucent (about 3-4 minutes).
- Add minced garlic, carrots, and celery; cook for another 5 minutes until softened.
- Stir in chicken breasts and pour in chicken broth. Simmer until chicken is cooked through (approximately 15 minutes).
- Remove chicken, shred it with two forks, then return to the pot along with heavy cream.
- Add gnocchi and spinach or kale; cook for about 5 minutes until gnocchi floats.
- Season with salt, pepper, thyme, and bay leaves to taste before serving.
