- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese (divided)
- 2 cloves garlic, minced
- 1/4 tsp nutmeg
- 1/2 cup panko breadcrumbs
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cut butternut squash in half, scoop out seeds, and roast cut-side down on a baking sheet for about 45 minutes until tender.
- Allow squash to cool slightly, then scoop into a blender. Add heavy cream, garlic, nutmeg, salt, and pepper; blend until smooth.
- Transfer mixture to a bowl and fold in half of the Parmesan cheese.
- Pour into a greased baking dish, sprinkle remaining cheese and panko on top.
- Bake for 30-35 minutes until bubbly and golden brown.
