  • 2 cups mashed sweet potatoes (approximately 2 medium sweet potatoes)
  • 1 cup granulated sugar
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ cup unsalted butter (softened)
  • 3 large eggs
  • 1 ½ cups all-purpose flour
  • 1 tsp pure vanilla extract
  • Powdered sugar (for topping)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, cream the softened butter and granulated sugar until smooth.
  3. Gradually mix in the flour until crumbly. Press into the bottom of a greased baking dish.
  4. Boil or bake sweet potatoes until soft; mash until smooth.
  5. In another bowl, combine mashed sweet potatoes with eggs, sugar, cinnamon, nutmeg, and vanilla extract; mix well.
  6. Pour filling over crust and smooth out evenly. Bake for 30-35 minutes or until set.
  7. Allow to cool completely before cutting into squares. Optionally sprinkle with powdered sugar before serving.
