  • 1 lb ground beef (80/20)
  • 1 cup breadcrumbs (plain or Italian seasoned)
  • 1 large egg
  • 4 cloves garlic (minced)
  • ½ cup grated Parmesan cheese
  • 1 jar (24 oz) marinara sauce
  • 4 sturdy sub rolls
  • 2 cups shredded mozzarella cheese
  • 4 tbsp butter (melted)
  • Fresh parsley (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, combine ground beef, breadcrumbs, egg, minced garlic, and Parmesan cheese. Mix gently until combined.
  3. Shape mixture into 1-inch meatballs and place on a parchment-lined baking sheet. Bake for 15-20 minutes until browned (internal temperature reaches 160°F).
  4. In a saucepan over medium heat, add the baked meatballs and pour in marinara sauce. Simmer for about 5 minutes.
  5. For the garlic butter, mix melted butter with minced garlic and parsley. Cut sub rolls in half lengthwise and brush inside with garlic butter.
  6. Bake buttered rolls on a baking sheet for 5-7 minutes until golden brown.
  7. Fill each roll with meatballs and marinara sauce; top with mozzarella cheese. Broil for 2-3 minutes until bubbly.
