- 1/4 cup red onion, finely chopped
- 3 garlic cloves, minced
- 1/2 cup panko breadcrumbs
- 2 large eggs
- 1 tsp dried oregano
- Zest of 1 lemon
- Salt and pepper to taste
- 1 cucumber, grated (for tzatziki)
- 1 cup full-fat Greek yogurt (for tzatziki)
- 1 tbsp fresh dill, chopped (for tzatziki)
- Juice of 1 lemon (for tzatziki)
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, combine ground turkey, parsley, red onion, minced garlic, panko breadcrumbs, eggs, oregano, lemon zest, salt, and pepper. Mix until well combined.
- Form mixture into balls about 2 tablespoons in size and place on a parchment-lined baking sheet.
- Bake for 20-25 minutes or until golden brown and internal temperature reaches 165°F (75°C).
- For tzatziki sauce, mix grated cucumber (squeezed dry), Greek yogurt, minced garlic, dill, lemon juice, salt, and pepper in a separate bowl until smooth.
- Serve meatballs hot with tzatziki sauce on the side.
