  • 1 lb ground turkey
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup red onion, finely chopped
  • 3 garlic cloves, minced
  • 1/2 cup panko breadcrumbs
  • 2 large eggs
  • 1 tsp dried oregano
  • Zest of 1 lemon
  • Salt and pepper to taste
  • 1 cucumber, grated (for tzatziki)
  • 1 cup full-fat Greek yogurt (for tzatziki)
  • 1 tbsp fresh dill, chopped (for tzatziki)
  • Juice of 1 lemon (for tzatziki)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine ground turkey, parsley, red onion, minced garlic, panko breadcrumbs, eggs, oregano, lemon zest, salt, and pepper. Mix until well combined.
  3. Form mixture into balls about 2 tablespoons in size and place on a parchment-lined baking sheet.
  4. Bake for 20-25 minutes or until golden brown and internal temperature reaches 165°F (75°C).
  5. For tzatziki sauce, mix grated cucumber (squeezed dry), Greek yogurt, minced garlic, dill, lemon juice, salt, and pepper in a separate bowl until smooth.
  6. Serve meatballs hot with tzatziki sauce on the side.
