  • 4 cups day-old brioche or challah bread, cubed
  • 1 cup canned pumpkin puree
  • 1 cup heavy cream
  • 3/4 cup brown sugar
  • 3 large eggs
  • 1/2 cup chopped pecans or walnuts
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger

Instructions

  1. Preheat oven to 350°F (175°C). Cube the day-old bread and place it in a large mixing bowl.
  2. In another bowl, whisk together pumpkin puree, heavy cream, eggs, brown sugar, vanilla extract, cinnamon, nutmeg, and ginger until smooth.
  3. Pour the custard mixture over the cubed bread and gently fold until all pieces are coated. Let sit for 15 minutes to soak.
  4. Fold in the chopped nuts for added texture.
  5. Transfer to a greased baking dish and bake for 45-50 minutes until golden brown and set.
  6. Allow to cool slightly before serving. Optionally drizzle with caramel sauce or serve with whipped cream.
