  • 1 cup cooked quinoa
  • 1 can (15 oz) low-sodium white beans, drained
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, grated
  • ½ cup rolled oats
  • 1 tsp cumin
  • 1 tsp paprika
  • ¼ cup breadcrumbs (optional)
  • 2 tbsp olive oil (for cooking)
  • Buns of your choice

Instructions

  1. Rinse quinoa under cold water. In a pot, combine quinoa with 2 cups of water; bring to a boil, then simmer for 15 minutes until fluffy.
  2. In a skillet, heat 1 tbsp olive oil over medium heat. Sauté chopped onion until translucent, about 5 minutes. Add minced garlic and cook until golden.
  3. In a large bowl, mash the drained white beans with a fork until chunky. Stir in cooked quinoa, sautéed onions and garlic, grated carrot, oats, spices, and optional breadcrumbs until combined.
  4. Shape the mixture into patties about half an inch thick and place on a parchment-lined baking sheet.
  5. Heat remaining olive oil in the skillet over medium heat. Cook patties for about 5 minutes per side until golden brown.
