- 1 cup cooked quinoa
- 1 can (15 oz) low-sodium white beans, drained
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 medium carrot, grated
- ½ cup rolled oats
- 1 tsp cumin
- 1 tsp paprika
- ¼ cup breadcrumbs (optional)
- 2 tbsp olive oil (for cooking)
- Buns of your choice
Instructions
- Rinse quinoa under cold water. In a pot, combine quinoa with 2 cups of water; bring to a boil, then simmer for 15 minutes until fluffy.
- In a skillet, heat 1 tbsp olive oil over medium heat. Sauté chopped onion until translucent, about 5 minutes. Add minced garlic and cook until golden.
- In a large bowl, mash the drained white beans with a fork until chunky. Stir in cooked quinoa, sautéed onions and garlic, grated carrot, oats, spices, and optional breadcrumbs until combined.
- Shape the mixture into patties about half an inch thick and place on a parchment-lined baking sheet.
- Heat remaining olive oil in the skillet over medium heat. Cook patties for about 5 minutes per side until golden brown.
