  • 2 cups fresh pineapple, chopped
  • 2 medium jalapeños, diced (seeds removed for less heat)
  • 1 cup red onion, diced
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup lime juice (freshly squeezed)
  • 1/4 cup brown sugar
  • 1/2 tsp salt

Instructions

  1. Prepare the ingredients by peeling and chopping the pineapple into small chunks. Dice jalapeños finely while wearing gloves.
  2. In a medium saucepan over medium heat, add the diced red onion with a drizzle of oil. Sauté until translucent (3-5 minutes).
  3. Add the chopped pineapple and jalapeños to the saucepan. Stir and cook for about 10 minutes until softened.
  4. Mix in brown sugar, lime juice, and salt; stir well and let simmer for another 5 minutes.
  5. For a smoother texture, mash slightly with a potato masher before serving.
  6. Stir in chopped cilantro just before serving.
