- 2 cups fresh pineapple, chopped
- 2 medium jalapeños, diced (seeds removed for less heat)
- 1 cup red onion, diced
- 1/2 cup fresh cilantro, chopped
- 1/4 cup lime juice (freshly squeezed)
- 1/4 cup brown sugar
- 1/2 tsp salt
Instructions
- Prepare the ingredients by peeling and chopping the pineapple into small chunks. Dice jalapeños finely while wearing gloves.
- In a medium saucepan over medium heat, add the diced red onion with a drizzle of oil. Sauté until translucent (3-5 minutes).
- Add the chopped pineapple and jalapeños to the saucepan. Stir and cook for about 10 minutes until softened.
- Mix in brown sugar, lime juice, and salt; stir well and let simmer for another 5 minutes.
- For a smoother texture, mash slightly with a potato masher before serving.
- Stir in chopped cilantro just before serving.
