Ingredients

  • 2 cups chopped kale
  • 1 cup sliced leeks (about 2 medium leeks)
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Wash the spinach and kale thoroughly. Chop the leeks into thin slices.
  2. In a large pot over medium heat, warm the olive oil. Sauté the leeks for about 5 minutes until translucent. Add the garlic and sauté until fragrant.
  3. Stir in the spinach and kale, cooking until wilted (about 3 minutes).
  4. Pour in the vegetable broth, bring to a gentle boil, then reduce the heat and simmer for 10 minutes.
  5. Blend the soup until silky smooth using an immersion blender or regular blender.
  6. Stir in lemon juice and season with salt and pepper as desired.
